Some people love to snack on cookies every night. Me, I have a cookie every once in a while. I do not really crave sweets, but like to have a cookie with soy milk or a coffee. I may eat one cookie once every two weeks, if that. But I am the first to admit I am partial to cherries. Here is a great recipe for tasty Chocolate Cherry Cookies. If you are not fond of chocolate chips, you can leave them out.
Cherry Chocolate Cookies
Ingredients –
½ C. butter, softened to room temperature
½ C. butter flavored shortening
½ C. sugar
¾ C. brown sugar
2 eggs
1 tsp. vanilla
2 ¼ cups flour
1 tsp. baking soda
1 tsp. salt
12 oz. chocolate chips or chocolate chunks (optional)
12 oz. dried cherries
Directions –
Preheat the oven to 350 degrees. Spray your cookie sheets with non-stick spray.
#1. In a medium size bowl, combine the butter, shortening, sugar, brown sugar eggs and vanilla mixing well. Set aside.
#2. In a smaller bowl, combine the flour, baking soda and salt. Mix well and slowly fold into the wet ingredients to combine both.
#3. Add in the chocolate and the dried cherries.
#4. Drop by rounded tablespoon onto the greased cookies sheets about 2” a part and bake 10-12 minutes.
*Makes approximately 2 dozen cookies. Store in an airtight container 1-2 weeks or in the freezer 1-2 months.
