Strawberry Cheesecake Cookies
Strawberries are a favorite fruit of many people. They definitely are one of my favorites. They can be used a la carte or incorporated into many desserts. It contains folic acid and vitamin C. It is the only fruit with the seeds on the outer part of the fruit. Here is a recipe for cookies that use strawberries and cheesecake. I bet you that these cookies will turn out to be one of your favorite cookies.
Strawberry Cheesecake Cookies
Ingredients:
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup White Chocolate Chipswhite chocolate chips
4 ounces cut into 1/4-inch chunks
1 stick unsalted butter (not margarine)
1 package (3.4 oz) Instant Cheesecake Pudding
1/2 cup chopped strawberries
1 1/2 cups sugar
2 large eggs
1 teaspoon pure vanilla extract
Directions:
Preheat oven to 325 degrees.
Mix flour, cheesecake pudding mix baking soda, and salt in a medium bowl and set aside.
In a mixing bowl mix sugar, butter eggs, and vanilla; mix well. Gradually mix in flour mixture. Fold in white chocolate chips and strawberries .
Using an ice cream scoop drop 2 inches apart on parchment-lined baking sheets.
Bake about 15 minutes. Transfer to wire racks. Let cool 5 minutes.
