Pistachio Day
Feb 26th is Pistachio Day. This nut is extremely popular in the Middle East. It is a member of the cashew family and the tree was originally found in the Middle East and Central Asia. Although the tree is slow to bear fruit, once it does, it produces for centuries. It takes approximately 8-10 years for a tree to bear fruit. They are known for their healthy benefits. They are rich in vitamins and nutrients, and have anti-oxidant properties.
They can be eaten as is once the shell has been removed or incorporated into food and desserts.
