Pineapple Coconut Cupcakes
Ingredients:
Prepared white cake mix
Fresh diced pineapple
Shredded coconut
Prepared cream cheese frosting
Candied diced pineapple
Toasted shredded coconut
Method:
Begin by preheating the oven according to the cake mix instructions.
Line 24 regular size cupcake pans with wrappers.
Spoon 1 heaping tablespoon of batter into each liner. Add 3-4 pieces of diced pineapple and a sprinkle of shredded coconut.
Cover with an additional tablespoon of batter and bake for the recommended time, according to mix instructions.
Once cupcakes are baked (a toothpick inserted in the center should come out clean). Allow to cool for at least 30 minutes.
Top each cupcake with a generous amount of prepared cream cheese frosting.
Garnish with a few pieces of diced candied pineapple and toasted coconut.
