What is Gluten?
Gluten is a protein found in wheat, barley and rye, and derivatives of these grains. If you are on a gluten free diet, you must avoid any foods containing these grains or their derivatives.
Here are some tips on Living Gluten Free:
Grocery Shopping
You do not have to shop at specialty stores for gluten free food. Most large grocery stores have a gluten free section or the products are marked. It is important that you read the package labels on all products. If you are unsure, call the customer service help line and ask for clarification.
Review Your Stock
Check your pantry. Several items might be hiding gluten additives. You should get a new toaster and new cooking utensils. That ensures a fresh start and no chance of grain residue. Donate unopened and canned items to a local food pantry.
Dining Out
If you like to eat at various dining establishments, search for gluten free offerings at your favourite restaurant. PF Chang’s and Outback Steakhouse offer gluten free meals.
Meal Planning
Gluten free does not mean calorie free. Watch your portions and plan out your meals. Once you have a pattern down you will have favorites appear and those items can always be in stock. Plan and prepare meals ahead of time, less stress and panic. Make sure you have lunch items before you get to work. If they are non-perishable, stash some items in your desk.
Cooking at Home
Find a good cookbook with gluten free recipes; try Bette Hagman or Carol Fenster. Many other authors have written gluten free cookbooks. Try some of their recipes out at home and find out which ones become your favourites. Many gluten free groups online offer support and share their strategies as well. Maybe this would work for you.
Be kind to yourself. It is a transition to be gluten free and you will need to take baby steps.
