This is one of my favourite loaf cakes to make. It is not overly sweet and can be eaten in the morning, along with your coffee. It can also be eaten as a late night dessert. It has been made many times over the years and is sure to be one of your favourites as well.
Recipe for Homemade Date and Nut Loaf
1 tsp baking soda
1 large egg
1 cup pitted chopped dates
1 1/2 cups all purpose flour
1 cup boiling water
1 cup sugar
1 tbsp. butter
1/4 tsp. salt
Method-
Chop dates and place in bowl. Add in the baking soda. Boil the water and add it to the bowl. Set it aside to cool. Then add in the rest of the ingredients. Mix well. Pour into greased and floured 9 x 5 loaf pan and bake at 350 for approximately one hour. Test with a cake tester to ensure the batter is not wet. Remove from oven and place on a wire rack to cool.
