White Chocolate Candy Dove Nests

White chocolate candy doves in nests that are made with meringue are a sweet treat that sings “Spring”! These nests are perfect to decorate each place setting at your table or to nestle in a bed of Easter grass on a platter. Make sure to make some of these white chocolate candy dove nests to hold Easter eggs or even the white candy doves.

DOVE NESTS

4 egg whites, room temperature
1/4 teaspoon cream of tartar
1 cup sugar
1 teaspoon instant espresso powder
2 teaspoons unsweetened cocoa
Brown food coloring (optional)

1. Heat oven to 225 F. Cover two baking sheets with parchment.
2. In a medium bowl, beat egg whites until foamy.
3. Add cream of tartar and continue beating until stiff peaks form.
4. Slowly trickle in the sugar, beating continuously and scraping the bowl often. Take your time – this should take several minutes.
5. Beat until mixture is shiny and stiff peaks form. It should not drop out of a spoon when it is turned upside down.

6. Mix in the espresso powder and cocoa, just until combined.

7. Put the meringue mixture into a large plastic zipper bag with the tip cut off, or a pastry bag with a round tube tip attached.
8. The nests and birds can be made any size you wish. Pipe a circle that is the desired size. Fill it in with just enough meringue to cover the parchment. Begin going around the outside circle with meringue, but don’t try to be too neat; it’s supposed to look a little messy. Build the outside up to form a nest.
9. Bake for 1 hour. After the hour is up, turn the oven off and don’t open the oven door. Let the meringues dry for 1-2 hours.
10. Fill nests with doves made from white chocolate “clay”. (You may also use jelly beans or small chocolate eggs.)
