Tonight, for dinner I made due with what I had on hand and managed to come up with something nutritious and delicious at the same time. When the weather gets cooler, we or rather at least I tend to focus more on root vegetables as they are more affordable than some of the imported vegetables that are no longer in season where I live.
It takes practice, no doubt, to be able to cook something different a couple of times a week that will feed a family. Many of us are looking for ways to save on our grocery dollars and I am no different. Tonight’s meal was new potatoes, steam baked in the microwave within 20 minutes, Stove Top stuffing, canned sweet corn as well as two different types of stuffed chicken breasts. Mind you these were pre-made, simply heat in the oven and serve. Two of them were done in garlic butter and stuffed with broccoli and the other two were stuffed chicken breasts with tomato sauce, cheese and spices. Seeing that the kids can eat pizza or pizza type stuff any time, day or night, I guess they will be the ones eating those ones. Me, I’d rather have the ones with the veggies in them any day!
So that was on the menu for tonight’s dinner, along with some creamy coleslaw in the fridge. Wonder who is going to munch on the chicken curry and roti later on tonight? Or the barbecued chicken? Wonder what I can whip up for tomorrow nights dinner? Budget recipes help to save you money, however, they do take some ingenuity in planning and improvising.
