Superbowl Sunday- Super Stuffed Mushrooms
Superbowl Sunday is fast approaching. Time to start getting in food stuff to prepare for the big day. Family and friends get together to watch the game, sts, eat food, and have a few drinks. Here is a recipe for Super Stuffed Mushrooms which can be served on Superbowl Sunday or any time you want or need an easy to prepare appetizer for the gang to nibble on.

Super Stuffed Mushrooms
Ingredients
12 button mushrooms
4 oz Philadelphia Original Cream Cheese, softened
3 Applegate Naturals Uncured Good Morning strips bacon, finely chopped
1 small shallot, peeled and finely chopped
2 garlic cloves, peeled and minced
2 tablespoons green onions, chopped
1 oz Frigo Crumbled Blue Cheese
(1 tablespoon red wine – optional)
salt and pepper
Instructions
- Preheat oven to 400 F.
- Rinse mushrooms and pat dry with paper towels. Break off stems and chop fine.
3. Cook 3 pieces of bacon in microwave. Make sure to cover them with paper towels to absorb the grease and to prevent splatters. Cook until brown and crisp. Remove from microwave and set aside.
4. The third piece of bacon is your treat to eat while you are busy prepping the mushrooms for cooking.
5. Add shallots and garlic to pan. Sauté until lightly browned.
6. Add chopped mushroom stems and continue to cook, for about 4 to 5 minutes. Make sure to stir them while cooking. Season with salt and pepper to taste. Optional – add in red wine and continue to cook, stirring regularly, until mushrooms are tender and liquid is evaporated. Remove from pan and allow to cool.
7. Combine cream cheese and blue cheese in a bowl. Fold in mushroom blend, crisp bacon bits and green onions
8. Arrange mushroom caps gills down on a baking sheet and lightly smear with olive oil. Bake in a 400 F oven for about 4 to 5 minutes or until mushrooms start to leak.
- Turn mushroom caps to cavity side up and using a small spoon, fill with cheese mixture. Return to oven and bake at 400 F for another 5 to 6 minutes or until stuffing is heated through and tops are golden brown.
