Stir Fry Chicken Chow Mein is relatively easy to prepare and is budget-friendly too. I used pre-cooked chow mein noodles that took less than one minute to prepare. Simply put the noodles in boiling water and drain well. Add to the pan where you have the stir fry ingredients.
Stir Fry Chicken Chow Mein
Ingredients
4 boneless, skinless chicken breasts
1 package of frozen vegetables
Salt and pepper
Olive oil
Soya Sauce
Teriyaki Sauce
Pre-cooked Chow Mein Noodles
Method
Cut chicken into bite-sized pieces.
Add a little olive oil to the pan.
Saute the chicken over low heat until it loses its transparent look.
Add the frozen vegetables (I used a package that contained broccoli, mushroom, onions, red peppers, and carrots.
Meanwhile, boil some water in a pot or even a kettle, add noodles to boiling water in the pot or add the boiling water to the bowl to cover the noodles.
Only let the noodles sit in the water long enough to loosen the noodles. If you leave them in the water too long, they will become sticky and clammy. Drain well.
Add the noodles to the pan or wok. Add some more olive oil, soya sauce, and teriyaki marinade. Cover and cook for a few more minutes over low heat. Mix well.
Other types of meat can also be used in making this simple, yet budget-friendly meal. Hamburger, steak, stew beef, liver, and corned beef are just a few choices. You can even make this vegetarian by omitting the meat or using tofu instead. No matter what you choose to use, either meat or meatless, this is one meal that your family will surely enjoy.
