Southern Fried Chicken
1 whole chicken, cut into 8 pieces (2 legs, 2 thighs, 2 wings, 2 breast)
4 cups of water
3 teaspoons of salt
1 cup of flour
2 tablespoons of cornmeal
1 teaspoon of seasoning salt
1 cup of buttermilk
2 eggs
1/4 teaspoon of onion powder
1/4 teaspoon of garlic powder
Vegetable oil for frying
Directions:
Soak the chicken in the water and salt for 2 hours in the refrigerator.
Mix the flour, corn meal, and seasoning salt in a bag.
Mix the buttermilk, eggs, onion powder, and garlic powder together and dip the chicken pieces in the mixture.
Drop two pieces of dipped chicken in the bag at one time.
Shake to coat.
Place on wire rack to rest.
Heat the vegetable oil to about 360 degrees F in a large skillet.
Place the chicken in the pan
Cook covered for first 5 minutes
Turn chicken over
Cook covered for another 5 minutes
Turn chicken over
Now cook uncovered turning occasionally as needed until completely cooked
NOTE *** the secret is to cover the chicken in the beginning. This starts the cooking process inside. Then uncover the chicken to make it crispy and golden brown on the outside.
As you can see, I added some mashed potatoes and green beans alongside the Southern Fried Chicken to complete the meal.
