Under the Sea-Mermaid Cupcakes
These Under the Sea-Mermaid Cupcakes are a vanilla cupcake base that is topped with delicious, fluffy icing and an ocean-themed decor. Serve them at beach themed kids birthday party or even a family barbecue on the beach! They are also great to serve to family and friends during Shark Week!
Under The Sea- Mermaid Cupcakes
Yield- Makes 24 cupcakes
Ingredients
1 ¾ cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2/3 cup sugar
2 eggs at room temp
2 tsp vanilla bean paste
1/2 cup vegetable oil
1/3 cup milk at room temp
1 1/2 tsp vanilla
Candy and Decorations
1 package of mini plastic forks
1 package of edible pearls
1 package of edible purple pearls
1 package of edible pink pearls
1 ocean life fondant mold (Miichaels)
1 container of white fondant
1 container of pink fondant
1 container of teal fondant
1 can of gold cake spray
1 bag of green edible grass
Vanilla Frosting Ingredients
1 cup unsalted butter (softened)
4 cups powdered sugar
4 TBSP heavy whipping cream
2 tsp vanilla bean paste
3 bowls
Teal gel coloring
Sky Blue gel coloring
1 piping bag with a large star tip
Note – MOLD FONDANT PIECES BEFORE YOU BAKE CUPCAKES
Cupcake Directions
Preheat oven to 350 degrees.
Line your cupcake pan with paper liners.
Place the the flour, baking powder, baking soda, and salt into a bowl and stir to combine.
Whisk well and then set aside.
In another bowl , mix together, sugar and eggs.
Beat until well combined.
Add the oil, vanilla bean paste and milk to another bowl.
Stir to mix well..
Take the bowl with the vanilla bean mixture and add it to the bowl that has the sugar and eggs.
Mix well.
Slowly add the wet ingredients to the dry ingredients.
Stir to blend together.
Do not over mix.
Use an ice cream scoop and use it to fill each cupcake liner 2/3rds full.
Bake the cupcakes at 350 degrees for 18 minutes.
Remove them from the oven and place them on a wire rack to cool.
Allow to cool in the pan for about 5 minutes.
Frosting the Cupcakes
Cream the icing sugar, vanilla, and butter until mixture is light and creamy.
If for some reason it doesn’t cream you can add a few drops of heavy whipping cream until it creams.
Test to see if the frosting can form a stiff peak .
You can do this by dipping the spoon in the frosting and holding the spoon up to see if the frosting falls off.
If it stays on the spoon, you are good to continue. If not, add more icing sugar, 1/4 cup at at time.
Mix well.
Divide the frosting into three bowls.
Add the teal color to one bowl.
Add the sky blue color to the second bowl.
Leave the 3rd bowl white.
Scoop some teal frosting into 1/3 side of the frosting bag.
Add the sky blue frosting to another 1/3 side.
Add the white to the last 1/3 side.
Twist the open end of the pastry bag and squeeze the frosting to the tip.
Start applying the frosting at the outer edge of each cupcake, moving in a circular motion inward to the center of the cupcake.
Decorating the Cupcakes
Place the white shells onto a piece of paper and spray with the gold spray.
Take a pair of scissors and cut about 3-4 inches of the grass.
Place the grass into the center of the frosting.
Place the fork on the right side of the grass.
Place some seashells randomly onto the cupcakes.
Top the cupcakes with some pearls.
