Cherry Garcia Bread
This Cherry Garcia Bread recipe is perfect for when you need a dessert to serve family and friends. It does not take much time to put together, and it tastes great. Very similar to a popular ice cream treat. The combination of semi-sweet chocolate chips and maraschino cherries make it a winner! It is one of my favorite sweet breads to make.
Makes One Loaf
Ingredients
2 cups all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
6 Tbsp. butter softened
2/3 cup sugar
3 large eggs
1 tsp vanilla extract
1 cup milk
1/2 cup chocolate chips
1/2 cup diced maraschino cherries
Directions
Preheat oven to 350 degrees
Add flour, baking soda, baking powder and salt to a medium-sized mixing bowl.
Set aside.
Add butter, vanilla extract, and sugar to another medium bowl.
Use your electric mixer to beat butter, vanilla extract and sugar until light and fluffy.
Add eggs to the butter mixture, one at a time, mixing well after each addition.
Add half the dry mixture to the wet mixture and stir until combined.
Add half of the milk and stir until combined.
Repeat with remaining ingredients.
Fold in chocolate chips and maraschino cherries.
Spray a 9×5 loaf pan with non-stick baking spray
Pour the batter into a 9×5 loaf pan.
Bake for 45-50 minutes or until a toothpick inserted into the center comes outt clean.
Remove from oven and allow to cool on a wire cooling rack.
When almost completely cooled, spread glaze over top and let set.
Drizzle with melted chocolate, if desired.
Icing Sugar Glaze
- 1/4 cup butter
- 2 cups powdered sugar
- 2 to 4 tablespoons milk or hot water
- 1 1/2 teaspoons vanilla extract
Place butter in microwavable dish and place in microwave for one minute to melt butter.
Place the 2 cups powdered icing sugar to a bowl.
Mash with fork to remove any lumps.
Pour the melted butter over the powdered icing sugar.
Stir to combine.
Add in the vanilla extract.
Add the lowest amount of liquid (milk or hot water).
Mix well.
If the mixture seems too thick, then gradually add in more liquid.
Mix well.
The consistency should be sort of watery, so that it is easy to pour.
Starting at one end of the loaf cake, slowly pour the mixture over the cooled loaf cake so that it has the icing cake all over the top of the cake.
Allow to dry.
Chocolate Chip Drizzle
1/4 cup semi-sweet chocolate chips
You can increase the amount of chocolate chips for the drizzle to 1/2 cup, if you are really fond of chocolate.
Directions
Melt 1/4 cup of semi-sweet chocolate chips in the microwave. Allow to cool slightly.
Drizzle loaf cake with the slightly cooled semi-sweet chocolate chips in a zig-zag
motion.
