No Bake Peanut Butter

Chocolate Icebox Cake 

Miniature Peanut Butter Chocolate Icebox Cake bursts with a smooth peanut butter flavor. When preparing these ahead of time, the whipped cream softens the crisp wafer cookie into a decadent cake-like texture. This simple, but cute dessert is always well received.

No Bake Peanut Butter Chocolate Icebox Cakes

Makes 8-9 Mini Cakes

Ingredients:

1 box (9oz) Famous Chocolate Wafers (Nabisco makes these)
They can be found in the ice cream toppings section of your local grocery store.

1 cup (8 ozs) Heavy Whipping Cream

3 tablespoons powdered sugar

2 tablespoons creamy peanut butter

Chopped Peanut Butter Cups for Garnish (optional)

Directions:

Add the whipping cream, powdered sugar, and peanut butter to the bowl of your electric mixer. Make sure that you have the whisk attachment, attached as you will be using this to whip the filling.  Once the whisk attachment is in place, beat the whipping cream and other ingredients on high speed for approximately 2 to 3 minutes. You will know when to stop once our see stiff peaks form.

Have your pre-made cookies ready and laid out on a cookie sheet or cutting board. Spoon 3/4 of a teaspoon of the whipping cream onto a cookie. Press another cookie on top and continue in this manner until your No Bake Peanut Butter Chocolate Icebox Cake is five cookies tall.

Decorate the top of the icebox cake with a dollop of whipped cream and peanut butter cup candy that has been cut into quarters. You could garish it with broken pieces of a semi-sweet chocolate bar if you wish to do so.

Place the completed No Bake Peanut Butter Chocolate Icebox Cakes onto your serving tray and refrigerate overnight. The cakes soften and may be difficult to move the next day before serving if they have not been refrigerated.
