Mixed Berry Crumble
Mixed Berry Crumbles are quite popular desserts in the fall. The berries that you use can be fresh or frozen. The more popular berry picks are strawberries, blueberries, blackberries, and raspberries. Incorporating them into your meal as a dessert is a wise choice. They are rich in anti-oxidants and provide the body with many important vitamins and nutrients.
Mixed Berry Crumble
serves 6-8
Ingredients:
1 cup flour
¾ dark brown sugar
¾ quick cooking oats
½ tsp salt
½ tsp vanilla
¾ cup butter, plus a bit extra for greasing pan, room temperature (1.5 sticks)
½ cup fresh cranberries
1 cup strawberries (cut in half)
1 cup blueberries
1 cup raspberries
¾ cup granulated sugar
3 TBS flour
½ tsp salt
1 TBS lemon juice

Preheat your oven to 375 degrees F and place the rack in the center of the oven.

In a large cast iron skillet or baking dish, use butter to grease liberally. Set aside. In a large bowl mix the 1 cup flour, dark brown sugar, oats, salt, and vanilla with a fork. Cut the butter into little chunks, and then toss into bowl with dry ingredients. Using a pastry cutter or your fingertips, blend the butter into the dry ingredients until it resembles a course crumble. Set aside.

In a separate medium to large bowl, add all the berries. Then add the granulated sugar, 3 TBS flour, ½ tsp salt, and lemon juice. Mix with your hands or a spatula until everything is mixed well and the berries are coated.

Pour berry mixture into your greased baking dish or cast iron skillet. Then, using your hands, sprinkle the crumble mixture over the top of the berries, distributing evenly. It should be a pretty thick layer. Place into oven and bake for 30-35 minutes, until the berry mixture is bubbling and the crumble is lightly browned.
- Serve immediately. Ice cream on top would be delicious!
