Mario Brothers Cupcakes
Cupcake Ingredients:
1/2 cup unsalted butter, room temp
2 egg whites
2 eggs
2 cups flour
1 tsp baking powder
1/2 tsp salt
1/4 baking soda
3/4 cup buttermilk
1 1/2 cups sugar
1 tsp vanilla
Blue gel food coloring
Cupcake Directions
1. Preheat oven to 350 degrees.
2. Line cupcake pan with paper liners.
3. Sift flour, baking powder, salt, and baking soda together in a bowl.
4. Beat butter on high for 30 seconds.
5. Add sugar and vanilla extract to the butter until well combined.
6. Add egg whites, one at a time, mixing after each.
7. Add eggs, one at a time, mixing after each.
8. Add 1/3 C flour mixture to the wet mixture followed by adding 1/3 cup of the buttermilk; add 1/3 cup flour mixture again then add 1/3 cup buttermilk mix on low speed, add 1/3 cup of flour and add the rest of 1/3 cup of buttermilk mix in low speed until thoroughly blended.
9. Add several drops of blue gel food coloring until the desired color is reached. Stir to blend the color throughout the entire batter.
10. Scoop the batter into the lined cupcake holders till 2/3 filled.
11. Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
12. Cool for 10 minutes.
13. Remove to a wire rack until fully cooled
Frosting Ingredients:
1 cup unsalted butter, softened
3 cups powder sugar
1 tsp vanilla
3/4 cup heavy cream
Blue and red gel food coloring
Frosting Directions
1. Beat the softened butter on its own until smooth.
2. Add vanilla extract.
3. Add powder sugar with heavy cream into the creamed butter until it becomes a smooth and thick texture.
4. If the frosting is too thick, add more heavy cream, if the frosting is too thin, add more powder sugar.
5. Take a spoonful of the frosting and hold the spoon upside down
if the frosting drops off the spoon add more powdered sugar …. if the frosting doesn’t fall off the spoon then it is ready.
6. Divide the frosting into 3 bowls.
7. The first bowl… add several drops of blue gel food coloring…mix well.
8. The second bowl ….. add several drops of red gel food coloring… mix well.
9. The third bowl… leave it as white frosting.
10. In a pastry bag with a large frosting tip ….Scoop the blue frosting into the bag.
11. Next scoop the red frosting into the same bag followed by adding the white frosting to the same bag.
12. Twist the open end of the pastry bag to push the frosting to the tip… Test it out to make sure that the blue, red and white frostings all come out together.
13. Frost the cupcakes.
Royal Icing Ingredients
2 egg whites
1 cup powder sugar
1/2 tsp cream of tartar
Add 1/4 cup powder sugar until stiff peaks form
Nude, red, black, brown blue and white gel food coloring
Royal Icing Directions
1. Mix eggs, cream of tartar, and powder sugar on medium speed for 4 minutes. If the icing can’t form peaks Add 1/4 cup powder sugar.
Mario….
1. Locate the picture of Mario that you want on Google. Copy and paste several of the same pictures of Mario onto one page.
2. Print this sheet out in color.
3. Tape this sheet to a large cookie sheet.
4. Tear a large sheet of wax paper and tape it over (to cover) the numerous pictures of Mario.
5. Divide the icing into thirds. In the first bowl add nude gel food coloring and blend well. Start by outlining the face and then color it in.
6. In the second bowl add several drops of red gel food coloring for the hat, and mouth. Outline first and then fill in with the food coloring.
7. Divide the remaining 1/3 into 4 bowls (2 TBSP) each. In each different bowl add 2 drops of gel food coloring.
8. First bowl.. brown; second bowl.. black; third bowl.. blue; fourth bowl…leave white.
9. Stir well to mix the colors within their bowls.
10. Using a small pastry bag filled with the nude royal icing and a #2 tip. Start by outlining the face first…. Fill in only the face with the nude gel food coloring leaving the rest of the face uncovered.
11. Using the red gel food coloring outline then color in the hat and inside of the mouth.
12. Outline the eyebrows, around the eyes, mustache and inner eye, then color in with the black.
13. Don’t color in where the blue of the eye should be…..Outline first then color in with blue.
14. Using the brown color work on the sideburns. Outlining first then color in.
15. Outline and color in with the white the rest of the eyes and the teeth.
16. Allow to dry for 5-10 hours.
17. Ensure the faces are dry, gently touch one of the images.
18. Cut the wax paper holding the completed faces into squares surrounding the image.
19. If the images are dry peel them off the wax paper and place on the frosted cupcake.
