Honey Stout Grilled Chicken and Broccoli

Honey Stout Grilled Chicken and Broccoli is a fantastic dist to cook up for St. Patrick’s Day or any time of the year. Boneless chicken breasts are cooked with delightful seasonings and marinated with the stout. The broccoli is then coated in olive oil and cooked in the oven. Almond slices are used to garnish the broccoli upon serving.

Serves 4

Ingredients

4 chicken boneless skinless chicken breasts

3 cloves garlic

1⁄3 cup honey

1 tsp red pepper flakes

1⁄4 cup low sodium soy sauce

1⁄4 tsp dijon mustard

dash of ground black pepper

1⁄2 cup Guinness beer or other stout beer

1 TBS olive oil + additional for grill

1⁄4 cup onion, minced

1 TBS cornstarch

2 TBS cold water

4 cups chopped fresh broccoli

1⁄2 tsp salt

1⁄2 tsp pepper

3 TBS olive oil

1⁄4 almond slices

Directions

1. Whisk garlic, honey, red pepper flakes, soy sauce, mustard, black pepper, and beer in a medium bowl.

2, Add chicken breasts to bowl, cover  and refrigerate for at least 1 hour  (up to a day).

2. Preheat oven to 350 degrees F.

3. In a small sauce pan over medium/high heat, add 1 TBS olive oil and minced onion.

4, Saute for a few minutes or until onions are translucent.

5. Remove chicken breasts from marinade and set onto a plate. Pour  marinade into sauce pan with onions, and bring to a boil while stirring  occasionally.

6. In a small bowl, mix together cornstarch and cold water to make a  slurry. Add slurry to boiling marinade, and stir. Boil for 15 seconds, then reduce heat to a simmer.

7. Continue stirring until the sauce is thickened (this should happen quickly). Remove from heat and set aside.

8. Heat your grill and brush olive oil onto the grill. Brush the chicken with the marinade, and place chicken marinade side down onto the grill. Brush top side with marinade.

9. Close grill and cook over medium/high heat for about 6 minutes. Brush chicken tops again with marinade, and then flip over. Brush top side with marinade again.

10. Cook another 5-7 minutes or until the chicken is cooked through.

11. While the chicken is cooking, place your broccoli in a baking dish/pan.  Top with olive oil, pepper, and salt and then toss to coat broccoli.

12. Place in oven and roast for 20 minutes, slide tray out and sprinkle almonds over the top of broccoli. Cook an additional 5 minutes or until  tops are lightly crisped.
