The other day I made some homemade chicken fried rice using few ingredients and a little time. It came out quite good and everyone seem to like it.
Ingredients for Homemade Chicken Fried Rice
4 cups Minute Rice
4 cups water
Soya Sauce
Olive Oil
Salt and pepper
Fresh garlic or Venetian garlic
Minced onion flakes
Boneless, skinless chicken breast
1 package of frozen mixed vegetables, this time I used one that had carrots, broccoli, mushrooms, cauliflower and onions.
Method
Cut chicken breasts into bite-sized pieces. Saute in pan with a little oil and some soya sauce. Meanwhile, place vegetables in microwave for recommended time. Boil water in kettle and add 4 cups water to 4 cups minute rice. Allow the rice just to get wet. This means do not let in sit in the bowl for long. Drain. Add the rice to the covered pan that has the chicken, toss in the vegetables and add some more soya sauce. Add a little more oil as well. Make sure you have a covered lid so that the steam will continue to cook the rice, the chicken and the vegetables. I usually add a little more Minute Rice straight to the pot/pan. Turn off and enjoy.
