These Green Velvet Cupcakes w Irish Cream Frosting are delicious and a great dessert to serve on St. Patrick’s Day.
Green Velvet Cupcakes w Irish Cream Frosting
Ingredients:
1 stick butter, softened
1 1⁄2 cups sugar
2 eggs
1 tsp vanilla extract
1 1⁄2 oz green food coloring
3 Tbsp cocoa powder
2 1⁄4 cup flour
1 tsp salt
1 tsp baking soda
1 cup + 1 Tbsp buttermilk
Frosting:
1⁄2 cup butter, softened
8 oz cream cheese, softened
4 cups powdered sugar
34 Tbsp Irish crème coffee creamer
Directions
1) Preheat oven to 350 degrees. Line cupcake tin with liners or spray with nonstick cooking
spray.
2) In a small bowl, combine flour, salt and baking soda. Set aside.
3) In a large bowl, cream together butter and sugar. Add eggs one at a time. Stir in vanilla
extract and cocoa powder. Add 1 cup of buttermilk.
4) Slowly add flour mixture letting each prior addition mix in before adding more. Add in
green food coloring and remaining 1 Tbsp of buttermilk.
5) Divide batter between cupcake tin, filling each well 2/3 full. Bake in preheated oven for
20 minutes or until a toothpick inserted in the middle comes out clean. Let cool completely.
6) For the frosting, beat together butter and cream cheese until smooth. Add powdered
sugar, 1⁄4 cup at a time, letting each addition fully mix in before adding more. Whip in
Irish crème and beat for 30 seconds on high. Pipe onto completely cooled cupcakes.
