Fiesta Stuffed Bell Peppers are easy to make, economical, and taste great. Although Spanish rice tastes great and is used in this recipe, you could alternate the recipe to include seasonings that are suitable for your family. FIESTA STUFFED BELL PEPPERS
4 Large Green Bell Peppers
3 Cups Cooked Spanish Rice (recipe below)
1 Can Non Fat Refried Beans
½ Cup Shredded Cheddar Cheese
Cilantro for garnish
SPANISH RICE
1 Cup Uncooked Rice (any variety although brown rice tends to require ¼ cup more liquid for this recipe)
1 Can Crushed Tomatoes – Undrained
2 Teaspoons Cumin
1 Teaspoon Garlic Powder
1 Teaspoon Salt
2/3 Cup Water
1 Tablespoon Margarine
Method;
1. In medium stockpot mix rice ingredients together and bring to a boil. Reduce heat and simmer for 15-20 minutes stirring occasionally until rice is cooked through.
2. Remove from heat and mix in can of refried beans and ¼ cup shredded cheese.
3. Slice top off bell peppers and remove seeds from inside. Rinse thoroughly and place in casserole dish or baking sheet. Scoop rice mixture into peppers filling each approximately ¾ of the way full. Top with sprinkle of shredded cheddar.
4. Bake in oven at 375 degrees for 20-25 minutes or until bell pepper is becoming tender and cheese is melted and bubbling.
Serve this along with a green salad and some bread to complete the meal.
