Planning on adding some festive deserts to your holiday table this year? Surprise your dinner guests with this Eggnog Bundt Cake. There are actually two recipes for you to choose from. One is a recipe that will tell you how to make this cake from a cake mix and the other is a recipe so you can make a Eggnog Bundt Cake from scratch.

Eggnog Bundt Cake – Cake Mix

1 box yellow cake mix

3 oz box of vanilla instant pudding mix

½ cup eggnog

½ cup Greek Yogurt

4 eggs, lightly beaten

¼ cup oil

1 tsp nutmeg

¼ cup water

Frosting:

1 cup powdered sugar

3-4 Tbsp eggnog

1 tsp nutmeg

  Eggnog Bundt Cake 1)      Preheat the oven to 350 degrees. Spray a bundt pan with nonstick cooking spray. 2)      In a large mixing bowl, combine cake mix, pudding and nutmeg. Stir well to combine. Stir in eggnog, Greek yogurt, eggs, oil and water. Stir until batter is completely mixed and smooth. Spread into prepared pan. 3)      Bake in preheated oven for 35 to 40 minutes or until a toothpick comes out clean when inserted into the center.  Cool in pan for 10 minutes. Transfer to cake to wired cooling rack and cool completely. 4)      In a small bowl, whisk together glaze ingredients. Pour over cooled cake allowing it to drip down the sides.   Eggnog Bundt Cake-Plated

Eggnog Bundt Cake – From Scratch

2 cups granulated sugar

1 ½ cup flour

1 ½ cups cake flour

1 Tbsp baking powder

1 tsp salt

1 cup butter, cut into ½ inch cubes

1 Tbsp vanilla extract

3 oz box of vanilla instant pudding mix

½ cup eggnog

½ cup Greek Yogurt

4 eggs, lightly beaten

¼ cup oil

1 tsp nutmeg

¼ cup water

Frosting:

1 cup powdered sugar

3-4 Tbsp eggnog

1 tsp nutmeg

  1)      Preheat the oven to 350 degrees. Spray a bundt pan with nonstick cooking spray. 2)      Combine the sugar, all purpose flour, cake flour, baking powder and salt in the bowl of a food processor. Pulse for 15 seconds. Add butter and toss to coat with flour mixture. Add vanilla extract. Pulse the mixture until fine and crumbly. 3)      In a large mixing bowl, combine flour mixture, pudding and nutmeg. Stir well to combine. Stir in eggnog, Greek yogurt, eggs, oil and water. Stir until batter is completely mixed and smooth. Spread into prepared pan. 4)      Bake in preheated oven for 35 to 40 minutes or until a toothpick comes out clean when inserted into the center.  Cool in pan for 10 minutes.
