Now that the cooler weather is here, many of us are busy making casseroles or crockpot dinners that are economical, yet tasty. For those of you who are looking for a easy crockpot chili recipe that does not require vegetables or many other ingredients might like to try this out this family favorite.
Easy Crockpot Chili Recipe
Ingredients:
2 1/2 lbs ground beef
2 big cans or 5 small cans of kidney beans, drained
1 clove of garlic (I used minced)
1 envelope of dry onion soup mix
1 large can or bottle of tomato juice
1 or 2 cans of diced tomatoes
3-5 tbsp chili powder
Directions:
Brown ground beef in skillet and drain off fat; put into crockpot
Open cans of beans and drain them, then pour into the crockpot
Put in garlic
Put in envelope of onion soup mix, the chili powder (to taste), diced tomatoes, and pour tomato juice over it all.
Stir and cook in crockpot 5-6 hrs on high, or 8-10 hrs on low. Yummy!
Of course, you can use the recipe as is, simply add a green salad and some fresh bread or you may alter the meat ingredients to either ground turkey or chicken. Another alternative would to make a meatless chili which is rather simple. Omit the meat and add other types of beans such as lentil, garbanzo, butter beans, canned corn, mushrooms, and tomato paste.
If you are making a meatless chili, you can add celery, eggplant, zuchinni, carrots, and any other type of vegetable that your family enjoys.
Cooler weather is upon us now and nothing beats a hearty chili to warm you up from your head to your toes.

I never thought to use dry onion soup mix in chili. I will have to try that soon.
