Having a visit from the Easter Bunny was something that I always looked forward to as a child. I know that my kids also enjoy the Easter Egg Hunt. This year surprise your family members with this delicious Easter Bunny Pound Cake that has a hidden surprise!
Directions:
1. Beat butter with an electric mixer set on medium speed until creamy. This should take five to seven minutes. It should be a light yellow color.
2. Add sugar, beating at medium speed until light and fluffy. It should be white and fluffy.
3. Add eggs, 1 at a time, beating just until yellow yolk disappears.
4. Next, add your flour to the creamed mixture.
5. Then add 1 cup of flour to 1/4 cup of milk ending with your last cup of flour.
6. Beat at a low speed after each addition.
7. If lumps remain gently stir with a rubber spatula.
8. Gently stir in the extracts.
9. Divide your prepared batter in half.
10. Add a few drops of pink food coloring to one half.
11. Blend in the pink food coloring to ensure even coloring throughout the batter.
12. Grease a medium size cookie sheet.
13. Pour/spoon the pink tinted batter unto the prepared cookie sheet.
14. Bake your batter on the cookie sheet for 1 hr.
15. Test it with a toothpick to ensure that it is done.
16. Set this aside to cool.
17. Measure that your bunny cookie cutter fits within your loaf pan for height and width.
18. After your pink batter has cooled use your bunny cookie cutter to make your bunnies for your loaf pan.
19.Treat your loaf pan with baking spray or grease and flour.
20.Now pour about 1/3 of your batter into the bottom of your loaf pan.
21. Gently stand your bunnies in the middle of the loaf pan.
22. Hold them steady until they will stand on their own.
23. Gently fill the sides of the pan by spooning the batter into the pan.
24. After the sides are filled gently spoon additional batter on top of your bunnies.
25. Continue to spoon additional batter on top until it is even.
26. Bake at 300 degrees for 1 hr and 40 min.
27. Check to ensure that your loaf is done by inserting a toothpick. If it comes out clean then your p0und cake is done.
28. Cool on rack for 10-15 minutes.
29. Remove from pan.
30. If it is difficult to remove run your knife between the edges of the cake and pan to loosen.
31. Cool on your wire rack until completely cooled.
