Tonight’s dinner is another creation of mine. When you are a parent living on a budget you learn to improvise your meals with what you have on hand. No, tonight I did not make something in my Actifry. I put a one pot meal together that has a whole bunch of goodies in it. It started off with one can of creamed soup, some water,milk, garlic powder, minced onion, some salt and pepper, some dried thyme and four boneless pork chops.
These were added to a very large pan with a glass lid. I would not technically call it a frypan. More like a top of the range casserole pan. Well back onto the ingredients. I tossed in a whole package of white sliced mushrooms, took out a part bag of cheddar perogies and added them, along with about half a bag of cottage cheese ones. Kept the heat high just until the ingredients started to bubble. Then turned the heat to low and allowed the meat, soup, and perogies simmer. When the meat was done and the sauce thickened, I turned off the pan and opened a can of sweet corn, drained the liquid and then tossed it in.
Made some instant rice for those in my family to either choose to have the rice on the side, or to top the meat, perogies, and soup based gravy on top of it. Just before serving, I will top it off with some grated parmesan cheese. Might slice up some cucumbers and tomatoes to place on a bed of lettuce.
Learning to improvise with what food you have on hand will help you to save on your shopping dollar. Tomorrow night might be a meat lasagna with green salad on the side.
