Classic Mustard Potato Salad

Nothing screams summer picnic quite like classic mustard potato salad. Everyone likes a different version but our family loves the Classic Mustard variety. Potato salad is one of those things that every family makes just a little bit differently. I hope you enjoy our family favorite that also includes mustard, celery seed and dill weed for that added zip.

Classic Mustard Potato Salad

 

CLASSIC MUSTARD POTATO SALAD
6 large potatoes washed, diced and boiled (We leave skin on, but you may peel as you prefer)
1 small onion diced fine
2 hard boiled eggs chopped fine
2/3 cup Mayonnaise
¼ cup Yellow Mustard
2 tsp Garlic Powder
1 tsp Celery Seed
1 tsp Dill Weed
1 tsp Paprika separated (1/2 in mix and 1/2 sprinkled across top for color)
1 tbsp Pickle Relish
Salt & Pepper to taste

In large bowl,  cut potatoes into small cubes. Add in chopped egg and onion. In medium bowl mix together mayonnaise, mustard and seasonings along with pickle relish until well blended. Pour over potato mixture and incorporate well. Sprinkle top with remaining paprika and serve chilled. This classic mustard potato salad goes great with grilled chicken, ribs, burgers, or even fish. If you are serving a large group of people, double up the recipe in order to save yourself some time.
