Cherry Surprise – A Quick and Easy Dessert

One of my favorite fruit pies just happens to be cherry. Sadly to say the season is very short lived. I was hankering for something made with cherries and ended up making Cherry Surprise today. Mind you, I used canned cherries as the filling, but I can imagine that they will taste just as good. Here is the recipe for the Cherry Surprise-

You will need-

1 cup sugar

2 eggs

1/2 cup butter

1/2 tsp salt

1/2 tsp vanilla extract

1/4 tsp almond extract

1 1/2 cups flour

1 can of cherry pie filling

Method-

Place the butter and sugar in a bowl. Add eggs, beat until smooth. Add all the other ingredients except the cherry pie filling. Mix until well blended and forms a smooth dough. Take 1/2 of the batter and place it in the bottom of a greased square baking pan. Press firmly in place. Top with cherry pie filling. Then take a spoon and put some of the remaining dough on the spoon. Drop spoonfuls of the batter on the top of the cherry pie filling in random spots. Bake at 350 for 35 minutes or until golden brown.

Glaze-

Once this has cooled just a little bit, mix 1 cup icing sugar, 1 tsp vanilla, and 2-3 tbsp of milk in a bowl. Mix together until it forms a smooth paste. It will be thin enough to pour. Once this is well mixed, pour it on top of the baked cherry surprise in a zig zag pattern. My cherry surprise not glazed. You can omit this part if you choose to do so. Once these are cool enough, you can cut into squares.

I think that the next time I make these I will double to dough recipe in order to make a thicker topping that covers the whole cherry topped area.
