The next time you are thinking about making a dessert why not try this Swirl Cheese Cake? It is easy to make and tastes absolutely delicious

Berry Swirl Cheesecake
Ingredients
Crust
9 graham crackers, finely crushed
4 ½ tbsp. sugar
4 ½ tbsp. butter, softened

 

Berry Swirl Cheesecake Ingredients

Filling
5 8 oz. pkg. cream cheese, softened
1 ¼ cup sugar
4 tbsp. flour
1 cup sour cream
4 large eggs
2 tsp. vanilla
4-6 strawberries
½ cup blueberries

Berry Swirl Cheesecake Prep

Instructions

Preheat oven to 350˚.

In a small bowl thoroughly combine graham crackers, butter and 4 ½ tbsp. sugar.

In a 13×9 inch pan lined with foil that over hangs on the ends add the graham racker mixture and spread evenly over the bottom of the pan. Press down with the back of a fork to pack the mixture down.

Place in oven and cook crust 10 minutes. Lower heat to 325˚

In a large bowl cream together the cream cheese and 1 ¼ cups sugar. Add the vanilla, flour and sour cream and mix well. Add two eggs and beat until thoroughly combined, repeat with last two eggs.

Pour the cream cheese mixture over the crust and spread evenly.

In a food processor or blender puree the strawberries and Blueberries together with enough water to make a thick syrupy consistency.

Spoon the berry mixture over the cream cheese mixture and swirl in with a knife. Don’t go more than about half way down through the cream cheese with the knife. You can try and make a pattern, but it is harder than it looks.

Bake at 325˚ until the center is of the cake is set, approximately 40 minutes.

Remove from oven and let cool completely. Refrigerate 3-4 hours before removing the cake from the pan using the foil handles hanging over the edges.

Serve making sure the foil does not stick to the bottom of the crust.
