These Lime Coconut Cupcakes mix the tangy taste of lime and the natural sweetness of coconut to create a delicious cupcake. 1¼ cup flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 eggs at room temp
¾ cup sugar
½ cup oil
3 tsp lime zest
4 Tbsp lime juice (1 medium lime)
1 tsp coconut extract
¾ cup milk

Frosting

8 oz cream cheese
½ cup unsalted butter at room temp
1½ tsp coconut extract
1½ cups powdered sugar
2 to 4 Tbsp toasted coconut

Directions

1. In a medium sized bowl add the flour, baking powder, baking soda, and salt and combine.

2. In a separate bowl whisk eggs and sugar.

3. Add the oil, lime zest and juice, coconut extract, and coconut milk to the eggs and sugar mix. Mix well.

4. Combine the dry ingredients in a small bowl, mix and then add into the wet ingredients and mix well.

5. Line a cupcake pan with paper cups and fill each cup ¾ full.

6. Bake at 350 degrees for 18-20 minutes.

7. Use a toothpick to test the center of a cupcake.

8. Allow cupcakes to cool to room temp before frosting.

Frosting Directions

1.Beat the cream cheese using a hand mixer, adding butter 1 Tbsp at a time on medium speed until all butter has been added.

2. Add coconut extract and powdered sugar and mix until combined

3. Do not over beat frosting

4, Place frosting into a pastry bag with an frosting tipand frost the cupcakes

5. Garnish with a wedge of lime and sprinkle of toasted coconut.
