Made another meal in the crockpot today and thought to share it with you. Today’s meal consisted of brown rice and pork. This is just one of many crockpot meals that is rather convenient as well as budget-friendly. As you all know making rice or pasta dishes sure can help to stretch your food dollars.

9 boneless pork chops
2 -28 oz cans of diced tomatoes with herbs
2 celery stalks
salt and pepper
Worchestershire Sauce
Water
4 cups brown rice

1. Remove pork chops from package season with salt and pepper. Place in crockpot.
2. Add canned tomatoes and a couple of shakes of Worchestershire Sauce.
3. Wash and chop up two ribs of celery, add to crockpot.
4. Let this cook for 3 1/2 hours on high.
5. Add 4 cups brown rice to the crockpot and mix well.
6. Periodically check to see that the rice is covered with water.
7. Brown rice takes a little longer to cook than white rice. The water is absorbed by the rice while cooking.
8. Break the pork chops into bite sized portions while the rice is cooking.

    It’s funny you should share this, I just took a pork roast out of the freezer for tomorrows dinner, and was wondering what on earth to do with it this time (I always seem to do the same thing, pulled pork sandwiches). This sounds like a simple, yummy and quickly prepared (which is key…new mom here lol) meal that I might just be able to get the little one to try 🙂 Thanks for sharing!!
