Chocolate Blackberry Cupcake with Blackberry Compote
INGREDIENTS
Pre-heat over at 350 degrees
1/4 cup unsalted butter ( room temp )
1 cup sugar
1 cup chocolate chips
2 large eggs ( room temp )
2 large egg yolks ( room temp )
1/2 cup vegetable oil
2 tsp vanilla extract
1/3 cup sour cream
1 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup cocoa powder
1/2 cup whole milk
DIRECTIONS
In a medium-sized mixing bowl or the bowl of a stand mixer, mix butter and sugar.
Melt the chocolate in the microwave or in a double boiler.
Add chocolate to the butter/sugar mix and mix all together.
Add in eggs and egg yolks one at a time mix with butter mix.
Add in oil, vanilla, and sour cream mix in until all combined.
Sift flour, salt, baking soda, and cocoa powder into a separate medium bowl.
Add dry ingredients to wet ingredients, mixing all together.
Mix in whole milk.
Blackberry Compote
2 cups blackberries
3/4 cups sugar
2 tbsp. Lemon Juice
1 tbsp. of Fruit Pectin or Corn Starch
In a sauce pan combine all ingredients and bring to a rolling boil.
Reduce heat and simmer until compote thickens.
Place to the side and let cool.
FROSTING
Blackberry Frosting
2 cups butter (room temp)
6-8 cups powdered sugar
1 cup of fresh washed blackberries smashed
Directions
Add butter, blackberries to the mixer bowl, set speed at medium
Now begin to add the powdered sugar one cup at a time and beat until well blended.
Increase the speed to med. speed until light and fluffy.
Place frosting in a pastry bag and pipe onto the top of the cupcakes.
