FollowCarrot Cake Day is Feb 3rd. I used to make carrot cake all of the time when my kids were a little younger. The carrots provide the sweetener for the cake and it was often the practice to add sweet vegetables to cakes because in the Middle Ages sweeteners were rather expensive.
I like to top my cake with a cream cheese icing. However, my tastes have changed somewhat and think I would reduce the amount of ground spices used in the recipe I used to make.
Crushed Pineapple Makes It Moist
I also add a can of pineapple to the mix. The carrots work as the sweetener and the crushed pineapple and vegetable oil make it super moist. I think I have a recipe for this type of cake on this blog. You could also make cupcakes.
