Budget Meals – Big Pot of Chili

Well, it is cold and damp and I thought that I would make a big pot of chili for dinner tomorrow night. I wanted to share this recipe with you all and although there are many variations of it, it definitely is a good way to stretch out your food dollars. This is just one way I prepare chili for the family.

2 lbs lean ground beef
salt,pepper, garlic powder, onion powder
1 whole onion chopped
2 bay leaves
2 small cans tomato paste
1 can diced tomatoes
1 can stewed tomatoes
Couple of shakes of Worchestershire sauce
2 cans red kidney beans
1 can chick peas
1 can sweet corn
1 can baked beans with molasses
Chili powder to taste

Throw everything into a large pot and let simmer until done. Bread can be used to for dipping and served with a side salad. I think that we will have it plain for the first night and the next night, I will make some rice to place the chili on top. Any type of meat can be used in place of the beef or you can also make it meatless. Very economical and tasty!
