Well, made another budget-friendly meal again. It is a great way to help stretch your food dollars and still make something nutritious for your family. Tonight’s meal was Peppered Pork with Pizzazz, it was great and I will share the recipe with all of you. Mind you, you can incorporate any type of meat of your choosing, it does not have to be pork chops. It can be steak or chicken as well.

Peppered Pork with Pizzazz


Budget Friendly Peppered Pork with Pizzazz

Ingredients

6 grilling pork chops
1 28 oz can diced tomatoes with herbs
Green Pepper
Chopped Onions
Salt and Pepper
Garlic chopped
Sliced Mushrooms
Brown Rice

Method

Lay chops in covered pan with glass lid. Add a little oil, and the can of tomatoes, juice and all. Chop onion, garlic, and whole green pepper. Add to pan. Add seasonings. Cover with lid and let the chops simmer for some time in the tomatoes. Add approximately 2 cups brown rice, and simmer for approximately 40 minutes. Watch to make sure that the liquid is not fully absorbed. Add more water if needed. Remove from heat and let the rice absorb the remaining juice.

As for the spices, if you like real hot you can also add some jalapeno peppers or any other type of hot peppers of your choice. When you make a one dish meal such as this, you can easily provide your family with many of the daily nutrients they need.

Meat for protein, rice for grain, tomatoes- vitamin C and E, mushrooms-vitamin D, green pepper- carbohydrates and dietary fiber.
