Disneys Under the Sea Ursula Cupcakes
Like many other baby boomers, Sunday nights meant gathering in the living room after dinner to watch The Magical World of Disney on tv. My love for all things Disney grew, as I did. Your children would love you to make these Disney Under the Sea Ursula Cupcakes.

Ingredients

  1. Preheat oven to 350 degrees. Line cupcake pan with the cupcake liners. Add the cake mix, butter, milk, and vanilla to a medium-sized bowl. Stir until combined. Fill cupcake liners 3/4 of the way full. Bake in the oven for 18-20 minutes. Take the cupcakes out of the oven and allow to cool on a wire rack before frosting.
Fondant Decoration Directions
  1. (Make the night before baking cupcakes) Lightly sprinkle the cutting board with the powdered sugar. Take 1 tsp. of the black fondant, and roll the fondant into a ball. Place the fondant ball onto the cutting board and roll it into a cone shape. You want the top to be thicker and the bottom to be long and skinny. Make it about 1-2 to inches long. Pinch off about 1/2 tsp. of the purple fondant and roll into a ball. Pinch off multiple pieces of the fondant and roll into balls. Make sure you have both large and small sizes. Place the larger purple fondant piece onto the thicker part of the black log. Place graduating sizes of the purple fondant balls on the black log shape. Add big fondant balls at the widest part of the log shape and place smaller balls down the log. Using the cake pop skewer, lightly push it into the purple fondant pieces to make the indents. Using the pointy part of the wooden skewer, lightly push in to the inside of the purple fondant piece. Mold the black fondant to make it look like a tentacle. Carefully mold the bottom of the tentacle to make a hook Repeat steps with remaining fondant pieces. Make sure to alternate the sizes of the tentacles Let the tentacles dry out overnight before placing them on the cupcakes.
Frosting (Icing) Directions
  1. Combine all ingredients except the gel food coloring and mix on medium speed with a hand or stand mixer. Mix until you see stiffed peaks form. Once the frosting is made, divide it into 2 bowls. Add a few drops of black gel food coloring into the first bowl. Add a few drops of purple gel food coloring into the second bowl. Place the piping bag into a large glass and fold the sides of the bag over. Place one spoonful of the purple frosting onto one side of piping bag. Now scoop one spoonful of the black frosting onto another side of the piping bag and set it aside. Take a fondant tentacle and place the thicker part onto the top of the cupcake like the sample image. Place a toothpick into the first purple dot on the tentacle and push the toothpick all the way into the cupcake. Stop pushing in when the toothpick cant go in any further. Repeat step with remaining tentacles. Frost the cupcakes and enjoy!
